Can they still be baked or cooked for dinner? My dh made a wonderful breakfast this morning but left 4 eggs (organic, very expensive) eggs on the counter and we just got home and found them.
I really don't want to waste them!!

They're fine. You can even re-refrigerate them and use them next week if you want to.
Europeans store their eggs on the counter, not in the fridge.

True. When we lived in Europe the eggs in the stores weren't even refrigerated.

I don't store our eggs in the fridge. They're from our own hens and keep very well on the counter. Of course, we like them so much, they don't end up staying on the counter for long... but certainly more than 8 hours. :001_smile:

We kept our eggs on the counter in Europe, but they had never been refrigerated. I'd throw away eggs that had been previously refrigerated and then left on the counter.

If you are really worried put them in a pot of water and see if they sink or float. Floaters are bad, sinkers are good. Even if they only touch the bottom a little, if they aren't on top, they are still good.

our eggs here at all either. But, they have never been refrigerated. A lot of recipes call for you to bring eggs to room temp. before using them so I would guess they're okay.

they are washed, and that allows bacteria to enter through the shell.
Eggs in Europe are not washed, and that is why they aren't refrigerated.

if I bothered at all. Unless they were already old, I think I'd just put them back in the fridge.
For the test, if they sink, they're fine. If they touch the bottom but are up and down, I use them for baking. If they float all they way, I throw them out.
If they're free-range, fertilized, organic, etc etc, they may be unwashed too. See if it says on the carton.
When I was in Europe, I noticed the difference between the commissary eggs and the farmer's market eggs. It took three - four weeks in my fridge for the farmer's market eggs to feel like the store eggs. Made me wonder how they dated them?
