I just remembered! She's been recently diagnosed & had to clean all starches & sugars (even fruit) out of her house.

*Can* I serve a roast? If there are potatoes, is that ok, as long as she doesn't eat them?

Obviously bread is pointless. The other veggies should be fine. A salad.

Pointers?

Yes, roast beast is fine.

Potatoes will not affect the roast, cooked alongside.

Salad is good.

Someone is not teaching her well about if she cleaned out all starches and fruit, but if that's working for her now, I wouldn't interfere.

Cooked carrots are pretty highly glycemic, so you might want to go with some green beans on the side.

Roast is perfect. She probably won't eat the taters. Other veggies are great! A salad would be perfect. A multi-grain, whole wheat bread might be OK for her.

I'm diabetic.

Yeah, I wondered. But she's kind-of...over-the-top about some things, so I just accept that either a) she's right/ a dr told her that or b) it makes her feel better to do it that way. My mom tries to argue w her about stuff. They don't get along as well. ;)

Ooh, good to know. I usually cook my green beans in mustard. (She cooks hers in bacon fat, lol.) Will the mustard be ok for her?
