View Full Version : What can I make for dinner with these items?

I tried allrecipes.com ingredients search and entered these items and it came up with nothing. Not that that site has ever worked for me, lol, but I thought I'd try it again before coming here, knowing you all would tell me to try there. :)

I need to use up an eggplant and a package of portobello mushrooms for sure. I also have baby spinach, carrots and broccoli. No meat. I have a few tomatoes, but they're frozen, so they can only be used in a stew or soup because of the moisture they will have. I do have some rice as well. We just had ratatouille the other night so I'm not really wanting another veggie stew thing. Well, I don't mind it, but I know my family isn't going to want it.

Any thoughts? Thanks!

How about eggplant parmigiana? Use the tomatoes to make your sauce and the other veggies to make a salad.

I make the batter for the eggplant with: 1 egg, 1 c milk, 1T vegetable oil and 1 cup flour. Combine the wet ingredients first then slowly add flour while beating so that it's smooth. Dip eggplant slices in the batter then fry until golden. Make your sauce (not sure what all ingredients you have but a basic tomato and basil sauce is pretty simple) then layer eggplant/sauce/cheese and bake at 350 for 30 minutes.

Try this site - you can put in the ingredients you have using the & sign, and also use a "not" phrase if you definitely don't want some ingredient included.

I would, LOL, but I just made that about 2 weeks ago and I know it's not gonna fly again for another month or so at least. The kids endure it because they have to, but twice in 2 weeks? Wow, that's asking a lot of them, LOL! Sorry, I should have mentioned that in my post.

Although, now that I'm sitting here thinking on it...I wonder...would eggplant parmigiana freeze well? Perhaps I could make it, they could "suffer" through ONE night of it, and I could freeze the leftovers? I truly have no idea if eggplant freezes well...do you?

Sounds like stir-fry to me. :D I had tofu-eggplant something-or-other at Panda Express. It was yummy!
