I store them in my chest freezer, for two reasons. First, the temperature kills off any...um, unwanted visitors or potential unwanted visitors (sorry, ick), and second, they stay fresher in the long term.

Yes, the freezer would be the best place to keep them from becoming rancid too soon. Whole (un-ground) grains store even longer, and I keep those in buckets with gamma-seal lids.
