View Full Version : Another food question - what would you add to a leafy salad with mangoes?

My husband and I are going to a friend's home for dinner tomorrow. I'm planning on bringing a salad with mixed greens and mango slices. Would you add anything else to the salad? It seems like it needs another ingredient, but I'm not quite sure what.

Dried cranberries seem too sweet.
Feta cheese seems incompatible with the mangoes.

Red onions if you'd like something with a bite to balance the sweetness of the mango? Or how about something with a crunch like nuts or sesame sticks?

Red onions were my first thought too. Radishes are another option -- they're a rather ignored little veggie, but some very thin wedges can add crunch and a bit of spice to balance the softer, sweeter mango.

My firs thought was also red onions. And some sort of glazed nut. Walnuts or pecans, perhaps?

How about some toasted sliced almonds along with the thin onion slices? It also tastes great with Italian, French or Poppy Seed dressings. We just had this salad last night, only with mandarin oranges instead of mango. It's my favorite salad.

I have a great salad recipe (adapted from Cooking Light) that uses greens, mangos, strawberries and nuts (I usually use pine nuts or almonds). I have added feta and think it tastes great (but I really love feta).

The recipe I have uses this as a dressing:
3/4 cup mango
1 tablespon lime juice
1/2 teaspon vegetable oil
1/2 teaspoon balsamic vinegar
1/2 teaspoon ground coriander
1/8 teaspoon salt

Place mango in food processor; process until finely chopped. Add lime juice, oil, coriander and salt. Process until smooth, scraping sides of bowl once.

The dressing isn't overly sweet but pairs well with the fruit in the salad.

One of my favourites salads has mixed greens, mangoes, red onion and toasted pumpkin seeds (the shelled ones). The dressing is simply canola oil, lime juice, salt and black pepper. It is sooo yummy.
