View Full Version : Help! My potatoes froze!

I bought an 8 lb. bag of potatoes (didn't they used to be 10 lb.? What happened?) last night and the folks assigned to unloading the van missed them. I wanted to make baked potato wedges for lunch today, but couldn't find them in the cupboard.

It got down to 10 degrees last night and it was 29 degrees outside when they were rescued from the van. The potatoes had a little bit of ice on them. The potato wedges are in the oven now, and I put the remainder of the potatoes on the porch to keep them "frozen" until I can figure out what to do with the rest of them. Can they be salvaged for later use or do I have to use them all up now? What type of cooked/baked potato dishes can be frozen? I've never frozen potatoes before.

I have no advice, but for some reason your subject line just cracked me up! I kinda felt like my potatoes were freezing last night too....if you know what I mean.

Thanks for nothing! :p They're in a pot of potato soup. We'll eat it tomorrow or next day. (I would like to know of any freezable potato recipes)
