View Full Version : Easter Hash Brown Casserole - HELP!

OK, ladies. . . . . .
In my bleary, "gotta get the house painted before Monday" fog, I have forgotten to buy cream of "Anything" soup to put in my hash brown casserole. I have sour cream & cheddar cheese & a bag of southern style hash browns.
Can I just add some milk & butter and hope for the best?
I am NOT. Repeat NOT. Going to Wal-Mart.:glare:
Anybody?

Make a white sauce with butter, flour and chicken broth--home made cream of chicken soup! I do this all the time. 3 T butter, 3 T flour, and 1 c. broth make approx. 1 can of soup.

30 oz Hash Browns
1/2 cup melted butter
1/4 tsp pepper
1/2 cup chopped onion
1 tsp salt
2 cups cheddar cheese
Mix everything together (except the hashbrowns). Add hashbrowns, mix thoroughly.
Spread in a 9 X 13 pan, bake at 350* for 45 minutes.

I've never used cream-of-something soup in it. :)
