Approximately how many large sweet potatoes would I need to yield 6 cups of cooked sweet potato? Also approximately how long would I bake a large sweet potato in the oven? I need to bake the potatoes and then mash them for the recipe.

I'd say 3-4 depending how large. For large potatoes, I usually do 15 minutes in the microwave and then an hour in a 400 oven.

I made it for Thanksgiving and then lost the recipe. I finally found a copy of it but I didn't have any of the notes that I made on it regarding cooking time, etc.
