View Full Version : Vegetarian dishes without beans/lentils or cheese?

I like to serve several vegetarian meals over the course of the week, but DH has asked me (very nicely) not to serve beans or lentils any more - he's just finding sitting in business meetings uncomfortable the next day, and I see his point entirely. I can't use cheese because Calvin doesn't like it.
Any ideas? I can get tofu, but have no idea how to serve it except for Chinese style, and we like to eat Western food too. I don't have an oven in my new Hong Kong home, so it needs to be stove top or slow cooker.

I make a terrific mushroom-barley soup (but sub wild rice for the barley, because barley would make ME uncomfortable sitting in meeting the next day, LOL!). I can share that, if you like. I stir a dollop of cream cheese and a LOT of Tabasco in mine, but they're purely optional :D
ETA: Oh crud, I just realized that it involves chicken and beef broths. If you think you want it, I'll still share :) Also, what about veggie pot pie? Will it bother your DS to have cheese hidden in something? I have a potato soup recipe that calls for a cup of shredded cheddar. How about baked potatoes with lots of topping options so they can pick and choose? Homemade pizza with no cheese on it? I seem to recall seeing a recipe for pizza that called for sauce and caramelized onions and other things in place of the cheese. If you think you'd be interested in any of those, I'll dig them up for you.

We eat many vegetarian meals, but honestly many of them are just individual sides put together.
Boiled potatoes, cabbage, carrots, lima beans, bread (from bread machine or muffins) and fruit. Things like that.
I also make soups, chowders and chili a lot. Well, I guess you cannot make chili without beans LOL. Then again, most of my soups have beans, rice, barley and lentils, but I guess you could stick with rice, pasta, or potatoes.
We also love breakfast food at dinner time. I usually make pancakes, eggs and veggie sausage.

What about Quinoa? Have you ever used it?
I've made Quinoa in chicken broth (use veggie broth) with corn, (chopped)carrots, and zucchini. (I added spices, too...) If you want an official recipe, I can dig one up tomorrow. ;)
Wraps?
Spinach, hummus (does that qualify as beans?) and veggies in a tortilla?

The Tanzanian potato balls are great favourites with everyone here and they fit your criteria.

Well, ratatouille is my personal beanless veg. favorite. How about homemade veg. soups minus beans? Veg/tofu curries are good, too.

How about some sort of flat bread with minimal toppings in a skillet? We used to make pizza on the grill this way -- it was awesome. Or something like a quesadilla, minus the cheese -- fruit or savory fillings in thin pastry, warmed on both sides in a pan?

Here are a couple of my favorites:
Wild & Brown Rice Salad
Toss together 2 1/2 cups of cooked and cooled Wild/Brown Rice Blend (I buy the pre-blended type so I can cook it altogether), 3-6 chopped green onions, 1/3 cup craisins, raisins, or dried cherries, 2 T chopped fresh cilantro, 1 T chopped fresh parsley with Raspberry Vinaigrette dressing (I love Paul Newman's). You can make this the night before and store in the frig. Just before serving, top with pecans or cashews.
Soup and Sandwich - Egg salad with Cucumber on Whole Wheat paired with Tomato Soup
As far as cheese, is it possible to make individual servings with or without cheese, according to preference? This works well with salads or wraps.
Is meat completely out of the question for your dh? I'm thinking that some deli sliced turkey or chicken would be easier on the tummy than the beans. I have a ton of recipes using deli or canned chicken at my blog under "healthy lunches."

We eat a lot of vegan dishes in our home. One of our favorite vegan recipes without cheese or beans is Sweet & Hot Cauliflower served over cous cous. It is from The Complete Vegan Cookbook. It requires many herbs/spices but it's so quick and easy to make and tastes delicious.
1 can (28 oz) chopped tomatoes
2 med. white onions
6 c. chopped cauliflower
1 c. water
2 large carrots, sliced
1/2 c. golden raisins
2 cloves garlic, minced
1 tsp paprika
1 tsp cumin (ground)
1/2 tsp. cinammon
1/2 tsp. cardamom (I omit this usually and use nutmeg instead)
1/2 tsp. salt
1/8 tsp cayenne pepper
2 tbsp. lemon juice
1/4 c. fresh parsely
1/4 c. fresh mint
Saute onions, cauliflower & carrots in a small bit of oil for 5 minutes. Add all ingredients (except lemon juice, parsely, & mint). cook over med heat for 15 minutes. Turn off heat, stir in lemon juice and cover for 5 minutes.
Cook cous cous (either with water or vegetable broth).
Serve Cauliflower mix over cous cous. Sprinkle with fresh parsely and mint.

just FYI....we used to be vegan, and wound up totally cutting out the soy...tofu and soy milk gave us incredible stomach cramps. tofu is bean curd and can still have the "bean effect" Tempeh, however, didnt seem to do that...maybe because it is fermented?
