View Full Version : Easy Easter Dinner menu???

I have to work Easter in the afternoon and we'll have church in the morning..........so what could we make that would be easy to do in the few hours I'll have inbetween?
We usually do the whole nine yards dinner.......but I've never had to work before either.
So, any suggestions??

Get a pre-cooked ham, some rolls and condiments for sandwiches. Use some of the Easter eggs for devilled eggs or egg salad. Maybe get a fruit try from the grocery store. To round it out, you could start some baked potatoes before you go to church and they'd be done when you get home. Add a try of pickles, peppers, veggies and you're all set.

I'm doing a grazing buffet because I really just want to kick back and relax all day.
I am roasting a ham (you could put that in your crock pot.)
I will probably do roasted veggies served at room temperature and some kind of pasta salad. Probably also a fruit salad or platter.
I'll have rolls and something sweet for dessert.
Any of those things could be done the day before and then just brought to room temp. if you want. Quiches are also good. Some people serve lasagna for Easter. You can put it together the day before and then stick it in the oven on a low temp before leaving for church.
If I had your schedule I think I'd be going for more of a brunch theme. How does that sound?

I'm no help. We're having Orange Roughy, roasted red potatoes, and sauteed green beans. We're pretty non-traditional when it comes to holiday meals. LOL

Spiral-cut ham popped in the oven on low before you leave, likewise sweet potatoes baked and scooped out into a casserole dish the night before, salad made ahead, rolls, deviled eggs... yummo.

I'm thinking putting the ham in in the morning before church
sweet potato casserole (put together the night before)
green beans
salad of some kind
and of course some deviled eggs..........yum!!
