My daughter is doing 8th grade English and I was using Easy Grammar with her. It just seems almost too easy and too much review for her.
I want her to work on her writing skills and was thinking of using something like Critical Thinking companies Editor in Chief?
Or is there a grammar book that works on more writing skills than nouns, verbs, etc.?
Any other suggestions?

Grammar by definition works on nouns, verbs, etc., and not on writing skills. There is a grammar series that does grammar by having the dc write (http://www.epsbooks.com/dynamic/catalog/series.asp?seriesonly=2344M), but I'm not sure it's enough for *writing.* If your dd's grammar is that great, she might not need more grammar instruction at all. She just needs writing; you're looking at something like Writing Strands or IEW.

My kids both finished the highest level Easy Grammar in the middle school years, but it didn't seem quite meaty enough. I knew there was more to grammar. We went to Rod & Staff, which has much more in-depth grammar, as well as writing instruction, and lessons on poetry appreciation as well. Since I was combining it with literature studies, I took two years per book, and I found the 7th or 8th grade R&S books followed well after Easy Grammar, as well as being very adequate for high school level English.

Now help with secular, which was what we orginally wanted for Grammar. We went from Easy Grammar to Rod & Staff. It's definitely more in depth on Grammar than Easy Grammar and there is some writing in it, although it isn't enough to make an entire writing course.

My son when from the Easy Grammar red book into A Beka 10th grade grammar (then 11th, then BJU 11th and 12th, that was his four year high school grammar sequence). My daughter went from earlier Easy Grammar texts straight to BJU and had stayed with BJU and done very well.
Warriner's English Grammar and Composition is excellent and indepth. I use the 1977 edition. The older the better.
