Side dish, main dish, casserole, stir fry, dessert........I don't care.......but my 13yo daughter who is trying to eat less meat, and really likes brown rice needs some new recipes. I'm thinking of buying a rice cooker so we can keep rice throughout the week available to her (and me) but we need some new ideas of things to do with it.......

I like to make brown rice with coconut milk, and then throw in some yellow curry paste. It's great just like that, or with whatever vegetables you would stir-fry, or with potato and cauliflower.

I guess we're pretty boring. We could eat that every day and never need another recipe. Yum! :drool:

Jasmine or basmati rice, not brown but more tasty, with a little butter, garlic, lemon juice, and lots of yellow curry powder. Very tasty side dish or main dish. Mix with fresh pineapple, yummy!!

Saute about 1/2 cup pineapple(fresh or canned) and 1 clove garlic, minced in 1 tsp butter, until pinapple is slightly browned. Add pineapple and 2TBSP chopped cilantro to 2 cups rice. I usually serve this with homemade black bean burgers. It's very good! Also rice cookers make great rice and they are easier to clean!

We are big rice and bean fans. I can't be bothered cooking the beans from scratch so I use tinned organic black beans, red kidney, chickpeas, haricot, etc., etc. I put in organic tinned chopped tomatoes, garlic, chillis from the garden, onion etc, and have that for lunch or dinner. I try and make it different by combining different beans and different spices.

We also stirfry veges and bung them in with the rice and some tamari and sesame oil.

I also make a rice pudding with coconut milk, nutmeg or mixed spice and vanilla. It is very rich, but lovely on a cold day or evening.

Mmmm. We love rice!

Melt 2 T of butter in a heavy bottomed pot. Saute 1 chopped white onion until translucent, then add 2 chopped cloves of garlic and heat briefly. Add 1 cup of long-grained white rice, and saute until the rice turns from translucent to bright white. Do not brown. Pour in 2 cups of chicken broth (nonfat is fine for this if you want). Heat to boiling, cover, turn down to simmer, and cook, covered, for 20 minutes. Eat this as is, or with gravy, or mix in 1/3 cup of grated parmesan cheese.

To make this with brown rice, I use brown basmati rice and cook for 45 minutes. I like it, but not as much as the white rice version. It is healthier, though.

Carol thanks so much.........my daughter's favorite food of all time is rice pilaf, but I can't find a simple recipe for it............this will be perfect!!!

This is one of our favorite rice dishes:
Spinach Bake
8 ounces Frozen spinach
1 cup cooked rice
1cup shredded cheddar cheese
1/3 cup milk
2 eggs -- slightly beaten
2 tablespoons butter -- melted and cooled
2 teaspoons onion -- chopped
1/2 teaspoon Worcestershire sauce

Grease dish, combine all ingredients and pour into dish. Bake at 350 degrees for 20-25 minutes.

I usually add more rice than what is called for.

the recipe above is for French style pilaf, not Middle Eastern style. It is awfully good, though.

This cookbook has recipes for all sorts of rice from all around the world and I highly recommend it.
