I had a friend in theater, and the "thing" for him was a rubber chicken. I have no idea why, whether it was an inside joke, or a theater tradition...
My DS says... give him CHOCOLATE. ;)
DH who did a stint in theater also says to give him a fruit basket. (IF he was in a leading role.)

For an adult, sure, or a card or fruit basket or a small treat, even a bottle of wine (or scotch, if he's a scotch drinker, lol)... All those are acceptable. Even a book, if you know the fellow well enough to give something meaningful.
For a kid, maybe a small toy or food treat. Ds has gotten a small stuffed dog he had wanted for a long time, book, etc. For adults, flowers are fine -- for kids, they generally prefer something less "girl-y".

I wouldn't, because I think it is too "girly" -- for instance, although girls get flowers after violin recitals at our music school, the boys don't. Most parents just give small novelty gifts like confetti-guns, chocolate, things like that...

We have developed a tradition of giving him something to hang on his wall that relates to the show.
For example, he was in a production of The Sound of Music, so we framed a small (5x7) copy of the poster from the show, and I glued a wooden cut-out of a deer onto the frame with the name of the show and the date (month and year) painted on it.
He did a children's show called Rats, which was based on the story of the Pied Piper. For that one, we found an image of an illustration from the Robert Browning poem and framed that, with a wooden star glued onto the frame, again with the show title and the date.
For his most recent series of Nutcracker shows, we got a shadow box and put in a small copy of the poster art, along with a miniature nutcracker and the numbers "2007."
He's got two shows coming up in the next couple of months, and I'm busy trying to figure out what to do for those. One is easy--a junior production of Pirates of Penzance. The other will be tougher, though: He's singing in the children's chorus for our local opera company's Turandot.
If you're looking for something simpler, though, you could always do a mylar baloon (if the male in question is young enough to appreciate it), or a congratulations card and some candy.
