View Full Version : I am salad-impaired. Need a recipe to go with...

My in-laws are coming in a week. Personally, I will, by necessity, be living on Jack Daniels while they are visiting, but I have to feed the rest of the household something. I would like a "new" salad idea. The rest of my menu will be:
Creamy Chicken and Noodles
Green Beans
Sister Shubert (sp?)rolls
Salad???? this is where someone will hopefully inspire me!

White chocolate chip cake for dessert.

I would like an "interesting" but not too flamboyant salad. Any ideas?

Even the kids LOVE this one:

Strawberry Salad

500g Spinach
1 pint Strawberries
Slivered almonds

Sesame Poppy Seed Dressing:

1/4 cup sugar
1/4 cup poppy seeds (or less)
1/4 tsp paprika
1/4 cup raspberry cider vinegar
1-1/2 tsp chopped onion
1/4 tsp Worcestershire sauce
1/2 cup vegetable oil

Mix dressing ingredients. Toss Dressing into salad and enjoy.

that you don't have to serve salad at all.

You have all your food groups accounted for, and dessert besides. My vote is to ignore the salad.

No help, just ROFLOL at your post! :D If the JD's a-flowin', you might end up with a pretty flamboyant salad whether you mean to or not! LOL

1 container cool whip
1 can crushed pineapple, drained
1 small package strawberry or cherry jello
1 container cottage cheese

Mix all together and refridgerate until set. You can do this the day before, it is actually better this way!

Are you looking for a "sweet" side salad (a la the south & midwest) or a green salad (the rest of us)? I lived in Iowa for 8 years. Those things they call "salad" out there, we call dessert! LOL

I've recently started buying the boxed spring salad mix and/or herb salad mix at the food store. I mix it in with romaine, add croutons, raisins or dried cranberries, some shredded carrot if you feel like it, some shredded cheese, etc. Whatever you want.

Easy and yummy. And this stuff doesn't have that "bag-o-salad" smell or taste to it. It just tastes FRESH and good for you!

I printed out both the spinach salad and fluff! Actually, the fluff would go well with the lunch menu I am having! I think I will do the spinach with the creamy chicken and noodles so as not to be overly creamy with dinner! But, the fluff will go well with my black bean soup. Thanks to both of you. Excelsior, can you expand on the size of your "containers" for these ingredients?
