I used to have a GREAT recipe, but last time I "did" it, it wasn't GREAT any more. My recipe: go to Sam's Club, buy carrot cake, take home, dig in. :D

It is fast, easy, and reliable - and tastes great as-is and gets raves when paired with a cream cheese frosting!
Carrot Cake
2 c grated raw carrots
⅓ c boiling water
½ c oil
3 eggs
1 ¼ c sugar
2 c flour
1 ¼ t baking soda
1 t cinnamon
1 t nutmeg
1 t salt
1 t cloves
1 t vanilla
1 c chopped walnuts
Preheat oven to 350º. Grease and flour cake pan.
In a large bowl, beat all cake ingredients except nuts at low speed for 1 minute, scraping sides of bowl constantly. Then beat at medium speed for 2 minutes. Add nuts and mix well.
Pour into greased cake pan. Bake for 45-50 minutes.
CARROT CAKE
Layers (flour mixture)
1 t. salt
2 t. baking soda
2 t. cinnamon
2 c. self rising flour, unsifted
1 c. oil (You’ll add these to the flour mixture above)
4 eggs (stir in one at a time)
3 c. grated carrots
2 c. sugar
Mix the first four ingredients above. Then gradually add the above flour mixture, beating just til combined.
Icing:
8 oz. cream cheese
1 stick butter, softened
Blend these two ingredients. Then add:
1 box confectioner’s sugar
1 c. chopped pecans
1 t. vanilla
Grease three 9 inch pans really well. Bake at 350 for 20-35 minutes til the sides come from the edge of the pans. Let layers cool completely before icing them. Enjoy!!
