I have two packs of skinless boneless chicken breasts. And zero inspiration. In my town it is currently 2:27 pm. Supper time is 5:30 or 6:00.

I need a plan folks!

Umm, Chicken Tikka Masala?

Chicken fingers?

Chicken Marsala?

Chicken Piccata?

Chicken Parmesan?

If you have pms you might want to take a can of French's Fried onions, crush them, and roll the pieces of chicken in them.
I've never done that but I saw it on the back of the can and I've always wondered about it.

I'd just boil those suckers and serve em with BBQ sauce (I like to heat the BBQ sauce up in a sauce pan, and put about 1/4 cup of orange juice in the bottle to swish around and get the rest of the sauce out, and mix that all with the sauce in the pan- it makes a really tangy sauce that the DC love).

I vote stirfry. What else you got?

Or... well, chicken rice broccoli cheese casserole?

I can make a whole lot of things with chicken! What else to you have?

I do the BBQ chicken thing mentioned above, or bake them in a casserole dish with sour cream on top (Ranch dressing also works) and the drippings make an excellent sauce to pur over steamed veggies, or dip if you like them raw... Sometimes I put the veggies right in the pan with the chicken... or quartered red potatoes... Mmmm....

Sometimes I put them in a pan with olive oil, salt and pepper on medium heat flipping occasionally until the juices run clear, slice them, and serve them on top of salad (caesar works well).

I can think of so many things... I love Middle Eastern tomato/garlic chicken. (I've posted the recipe here before, if you want it again, I'll find the link).

Tell us what you decide. I've got some chicken breasts to use tonight too. You've got my mouth watering!

Stir Fry
Simple Chicken Stew

And on a completely unrelated note, the chorus verse you have in your sig now is one of my all time favorites. It's so true, huh? To be able to bless the name of the Lord in the awful times as well as the awesome times is an amazingly comforting thing.

Chicken parmesan is a big hit here!
Chicken Kiev - cornflakes, butter, spices
Sesame chicken - soy sauce, jelly, ginger...
Cashew chicken - worcestershire sauce, red wine/balsamic vinegar...

Got a pk of Italian dressing seasoning stuff? Saute chix in a wee bit o' butter, garlic, boil some pasta, drain, toss all together with the seasoning pkt.

Chicken parm sounds good and I could do it but I am missing the pasta. Should I call dh and have him pick up the pasta? Or should I do something else?

Yes, have him pick up pasta.
Unless you have rolls, because you can do chicken parm sandwiches....

Yeah, have him pick up the pasta, it won't take long at all to cook once he's home. It's not like you'll be sitting around forever waitin' on supper. :)
