I'm making my favorite carrot cake but I'm making mini-muffins.
The recipe says to line the pan with wax paper then grease the wax paper.
If I really grease the muffin tins, will I be able to get them out? I don't want to use the paper liners.
Thoughts?

Most recipes I have tried like that, I use the spray oil in a can and it comes out great.
I guess you could just use oil and I brush too. Make sure you get all the corners!

That's what I do when I make banana muffins with my loaf recipe, too.
I'm going to do it this way and see how it goes. I'll let you know!

Several recipes I've taken from Simply Recipes (which rocks for recipes) say to grease only... but stuff sticks for me, every. single. time.
With greasing and flouring, I've never had anything stick unless I really goofed somewhere else in the recipe.

Sprayed with oil mister and they popped right out. They are delicious and it is killing me not to eat.
Must...save...for...rehearsal...dinner......
