Either that can be made ahead and then baked or something that I could bake and reheat. What sounds good? Anything?
There's nothing on and I'm in the mood to bake.

Baked oatmeal and Overnight French Toast are favorites here! Blueberry muffins.... check out Kendra in CA's blog, she had some great recipes listed. Hmmm, how do you link things on this new board??

I use this basic recipe, and change the ingredients depending on what I have in the fridge. Tonight it does happen to be ham and asparagus.

My mom used to make coffee cake, put it in the fridge and cook it in the morning. It always tasted wonderful. :)

MUFFINS. Make up a batch of muffins and you can freeze them or just refrigerate them. They're yummy and so very easy to reheat. :)

1 doz eggs
1 container cottage cheese
1 package shredded cheddar cheese
Crack eggs into a bowl. Fluff with a fork. Add other ingrediants and mix well. Pour into a well greased crockpot. Put on low 5-8 hours.
We only eat 1/2. So I put the other half into english muffins and have them for breakfast the next day! Easy!

Our breakfasts are normally sweet potato muffins. Very easy to make and have the benefit of being healthy. :)
1 mid size can of sweet potatoes, drained and mashed
4 1/2 c. freshly milled whole wheat flour
1/2 c olive oil
3/4-1 c. succanat (I prefer less)
2 c. buttermilk (I use 2% with 2 Tbsps of vinegar added 5 mins before mixing into recipe)
2 eggs
2 tsp baking soda
2 tsp baking powder
2 tsp salt (only 1 1/2 if using sea salt)
2 tsp vanilla
I usually add 3/4 c. choc. chips to ours. (Ok, that makes them not quite so healthy!)
Makes 24 large muffins. I spray my pans with Pam. Bake at 400 for ~16 mins. My kids devour them.
