This is my favorite way to cook a roast. It needs to be a good cut like a round roast or London broil, not a chuck roast.

Heat the oven to 500 degrees. Place the roast in a pan and roast, uncovered, for 5 minutes per pound. Turn the oven off and left the roast sit in the oven for 2 hours. Do not open the oven door! The roast will be perfectly medium-rare. My dh likes meat rare and he likes the roast this way. I always overcooked them before.

I love my pot roast (chuck roast) fixed this way:

Put it in the crock pot. Pour a "pot roast seasoning mix" packet over it. Pour in a half inch of water. Turn it on and walk away. Five - 7 hours later eat the falling apart meat.

Ree also has a pot roast recipe: Pot Roast (http://thepioneerwomancooks.com/2008/01/2008_the_year_of_the_pot_roast.html)

If you have a crockpot, cut up some onions, carrots and potatoes, put the roast on top, dump some beef broth or stock over it and cook it for eight hours on low. Make gravy from the broth. Deeeelicious. It's both my kids' requested birthday dinners, so that says something!

I make it on the stove and have always gotten rave reviews when I have made it for others. The only thing I do different is add more carrots.

Hope this isn't too late,

Sear the roast in oil on all sides.

Mix one packet french onion soup mix, 1 c. water, pour over roast and veggies (carrots, potatoes, onions), put in crock pot (or oven) at 300 and cook for HOURS. The longer the better in my opinion.

Make a gravy with a little cornstarch in the drippings after removing the roast and veggies. Too yummy!

This is one of my favorites!

Place roast in crockpot. Pour one envelope dry onion soup mix, one can of cream of mushroom soup and 16 oz of Pepsi over the roast. Cover and cook on high for 8 hours. Serve over rice.

(Everyone raves about this roast, and it's super tender when cooked this way. You can't taste the cola.)

Hope I'm not too late...

I love this recipe - put you pot roast in a crock pot with potatoes and carrots. Pour in one can of cheddar cheese soup, and one can of french onion soup. Cook all day, and YUM!! This makes the best gravy.

You could also cook it in the oven at 350 (I believe!)

Enjoy!:001_smile:
