2 cups cooked or 1 (15 ounce) can black beans, drained and rinsed
1/2 cup vital wheat gluten
1/2 cup plain whole wheat bread crumbs
1 teaspoon chile powder
1/2 teaspoon cumin
1/4 cup water
1 tablespoon tomato paste
1/4 cup finely chopped cilantro
2 cloves garlic
1/2 small onion
about 2 tablespoons olive oil plus olive oil spray
whole wheat buns

Mash beans with fork in mixing bowl
Add wheat gluten, bread crumbs, chile powder, cumin, water and tomato paste (and cilantro if using) but don't mix yet. Use grater to grate garlic in. Use large holes on a box grater to grate in the onion.

Mix everything together with fork and knead with your hands until uniformly mixed.

Divide into 6 equal pieces and shape to form a patty 1 1/2 inch thick.

Cook in a pan with a thin layer of olive oil for 5 minutes each side. Press with spatula during cooking, serve warm on burger buns.
