View Full Version : Ideas for leftover Taco meat??

Any ideas? We usually make carne asada so I thought I'd change it up a bit...wasn't a big hit so I have quite a bit of meat left. The meat already has mexican seasonings.

We put it on pasta with cheese, guacamole, salsa, cream cheese, etc. Yum!

pretty healthy. Just shred some lettuce, and add the cheese, guacamole, some olives, etc., plus some tortilla chips.

Use it for taco soup..
It's easy.. just google it..

Use it on top of baked potatoes with your favorite taco fixings.
Make Mexican lasagna (you'll get tons of recipes if you Google it).
Use it in quesadillas.

Yum. Now I want tacos!

How about Taco Burgers? We serve leftover taco mean on hamburger buns with lettuce, cheese, salsa if anyone's interested (though it makes it even more messy than normal) and corn and/or beans on the side.

Put in scrambled eggs then wrap-up in tortillas for breakfast burritos.

Ditto on the soup. I love having leftover taco fixings for it. A little extra chopped lettuce, cheese, and/or tomato make a great soup topper. Yum!

The meat already has mexican seasonings.Enclose the meat (and some cheese, olives, onions, etc.) in a crust of crescent rolls (use your imagination about how to lay them out overlapping, then fold over the filling a la an apple strudel). Bake at 350 deg until golden.
