View Full Version : Beef Round Roast - excellent recipes please(more)
Entertaining friends this weekend and want to cook a roast. In the past I've never been thrilled with my roast results. Would prefer to cook in potatoes and carrots with the meat. Any wonderful recipes would be so appreciated!!! And is it better to cook high and short or low and slow? TIA

I make this once a week for Sunday lunch. If frozen, I put it in the crock pot on low at bed time the night before. I add carrots and a packet of onion soup mix. I put in about 4c of water. When I wake up in the a.m., I cut up 4 or 5 potatoes and put them in the crock. I'll usually turn the roast over. We go to church and it's done when we get home! I'd say if you're cooking it for dinner, I might start out on high for a couple hours, and then low for 8 hours total.

I just brown the roast in olive oil and garlic before I put it in the crock pot. Then I slice up fresh mushrooms and a red onion to put in the crock pot with the roast. I might add about 1/2 cup water before I turn it on. It really tastes great :)

This is pretty much what I do, too. I rinse the roast, flour it lightly, then brown each side briefly in oil. I cook it in a covered Dutch oven with a couple of cups of liquid (I use beef broth w/o msg) for 1-2 hrs at about 350. I take it out, turn it over and add carrots and quartered potatoes to the liquid, then continue cooking it until it's tender enough that a fork easily shreds the meat. This is usually at about the 2.5-3 hr mark.

I cut a few gloves of garlic into quarters, and toss them in salt, pepper, ground sage and dried thyme. Then I make holes all round the roast with a sharp knife, stud the meat with the garlic, and rub in the seasonings. I roast in the oven to desired doneness or brown in a skillet before placing in the crock pot. You can prepare the meat this way before freezing it, which actually improves the flavor since the seasoning have more time to marinate. If you don't like garlic, try studing the roast with fresh rosemary instead. HTH

A friend shared this recipe with me; we make this in the crock pot at least once a month and my family loves it!
Put your roast in the crock pot. Combine one pkg. ranch dressing mix, one pkg. Italian dressing mix, and one pkg. brown gravy mix, and rub this into the roast. Add one lg. sliced onion and 2 c. beef stock to the pot. Cook on high for 4 hrs. or low for 8 hrs. Thicken the liquid to make gravy or use as au jus for French dip.

Place roast in crock pot on high. Pour the following over the top of roast: 1/4 cup soy sauce, 1/4 cup H20, 3 TBS Balsamic Vinegar, 2 TBS Worcestershire sauce. You can use the left-over liquids and thicken to make gravy.
