I am looking for your bean burrito recipes, please. I am trying to cut down on grocery costs and I saw a few of you had bean burritos in another post on menu ideas. Sounds good and cheap, just what I need. How about any other good cheap recipes or recipe sites with cheap recipes?
I really like Hillbillyhousewife.com any others?

Bean Burritos

1 can of fat-free refried beans
Shredded cheese
Sour Cream
Tortillas

I open the can of beans and put it in a micro-waveable container. I add some water and gently mix it in since my dd likes her beans a bit runny. Heat in micro-wave for 3 min.

I then take the tortilla, spread beans on it, top with cheese and microwave for 20 seconds or so until cheese is melted. Add sour cream and/or slasa.

There are lots of great variations on this.

You can brown ground beef with some taco seasoning to have meat for them.

You can use taco shells, you can fry the corn tortillas and make tostadas or mexican pizzas.

Tostadas:

fry a corn tortilla
Put it on a paper towel to dry
spread refried beans on tortilla
Add meat if wanted
Add sour cream and/or salsa
top with cheese and lettuce

Mexican Pizza:

Fry two corn tortillas
Dry with paper towel
spread refried beans and meat if wanted on one tortilla
top with 2nd tortilla
coat with juice from salsa
Sprinkle cheese on top
Heat in toaster oven for 5 minutes until cheese is melted
You can add lettuce or sour cream
Use pizza cutter to cut into 4 slices

This is a very easy cheap dish and very versatile:
This is my most versatile recipe, the original recipe came from a friend about 9 years ago. (I used cooked shredded chicken and dry beans that have been cooked)

Mexicali Chicken (this is the original recipe)
2 boneless chicken breasts
1/4 cup olive oil
1 can stewed tomatoes or salsa
1 can chili beans
6 oz. frozen corn
2 cups chicken stock
1 1/2 cups rice
shredded cheddar cheese
Cook chicken in olive oil and cut it up or shred. Preheat oven to 375 degrees. Pour rice and stock into a baking dish. Place chicken on top, add everything else except for cheese. Cover and bake 30 minutes or until rice is tender (depending upon the kind of rice, it may take longer) Remove foil, add cheese and let it melt. Serve.

I have done this recipe in the crockpot before, just watch to see if you need to add more water. Same goes with using brown rice vs. white.
I have also used hamburger or shredded beef in place of the chicken (or use shredded chicken) and beef broth instead of chicken broth. I really feel it is very versatile and is healthy, you can also use mozz. cheese instead of cheddar and probably black beans in place of chili beans.
This recipe can really be several dishes, I like it best baked in the oven. We sometimes have it with sour cream, chips and lettuce or I serve it with corn bread and a salad. I will use leftovers and roll in tortilla shells.

Bean burritos..
2 cans black beans
jar of salsa
mix beans and salsa together
put on tortillas, put cheese on top and fold
Bake at 375 for however long you want.
For some reason I like mine crispy. LOL!

I like to use black beans. I usually cook a bag or two of dried beans at a time and freeze what we won't use right away. For the burritoes, I carmelize one diced onion, add in beans, some frozen corn, and diced tomatoes and heat until everything is warm. I serve this mixture on tortillas with shredded cheese and taco sauce. It's one of my favorite meals.

I cooked up rice (long cooking) and lentils in water with a bouillon cube. Put it on a tortilla w/ a little cheese and it was very yummy.

I find dried beans the cheapest way to go. Here's my version of refried beans:

Soak 2 lbs pinto beans in water overnight. (Or boil for 10 minutes for a quick soak and let stand for 1 hour, covered.)

Drain. Place beans in slow cooker. Cover with water and cook on low all day until tender. (If beans aren't cooking fast enough by mid afternoon, turn to high.)

Drain, reserving a couple of cups of bean juice. Add back bean juice a little at a time while blending on high with a hand mixer. Keep adding juice and blending until beans reach desired consistency. Add about 1 T. salt and 1 T Mexican seasoning from Mccormick.

You can add onions to the slow cooker at the beginning, as well as salsa, etc...whatever you want to spice it up. But don't add salt until after cooking. Salt slows the cooking process.

And, here's my husband's all time favorite black bean burrito recipe:

I quadruple it for our familiy of 7, but here are the original proportions:

Bring 1 cup instant rice, 1 can rotel, and 1/3 cup water to boil in a pot. Remove from heat. Let stand 5 minutes. Add 1 cup shredded cheese and 1 can black beans. Stir until warm. (Don't leave the stovetop for long, because these will burn quickly.) Add chopped fresh cilantro if desired. (I don't do this.) Spoon into tortillas.

My favorite bean burritos taste like Taco Bell's.
Open a can of ranch style beans and dump into cast iron skillet (for some reason it tastes better if done in cast iron, but I am sure any kind will do). Mash. Add double amount of pintos (already cooked) and mash. Add garlic powder and creole season to taste. add some cheese and let it melt. It is so yummy!

Also Chicken and rice casserole:
Dump 1 large can of cream of chicken soup, 1 can diced tomatoes, chicken (whole pieces, shredded, cubed, doesn't matter) and 3c water into crockpot. Season to taste. I also like to add a bullion cube too. Let cook in crockpot for a few hours (if using raw meat until done) then add 2c rice. When rice is done, it is done. YUMMY! Use leftovers for soup.


Venus de milo soup
place about 1 lb of meat- I use chicken, link sausage, breakfast sausage, haburger meat, steak in small pieces- whatever I have on hand. Add a can (28oz) of crush tomatoes, a 15oz can tomato sauce, 5c water, and a can or bag of mixed vegetables. Cook all day on low, then add rice about a cup 30 minutes before it is time to eat. Serve this with some yummy homemade bread from the bread machine!

Sausage stew
1lb sausage with 1c chopped onion, 2 cloves of garlic, 2 cans kidney beans _or dried and add extra water- 2qts, water with 4-6 chicken bouillon cubes- cook all day- add rice when you get home- let cook 30 minutes.

Salsa soup
Take a 26oz jar of born and blackbean salsa. Add in 3 chicken or beef bouillon cubes- and 6c water, You can add chicken, hamburger, sausage or leave the meat out if you wish. Add 1c rice during last hour of cooking.

Chicken and pasta
Put bonelesss chicken- enough for your family, onion, spices- again I always use creole- 1 15oz tomato sauce, 1 large can diced tomatoes. Let book on low all day- cut up chicken. Serve over egg noodles with salad.

Crockpot beef
My husbands favorite- I use tenderized venison stk.
Add 1lb or more stew meat with 1 can crm mushroom soup, and onion soup mix. Let cook all day- serve over rice with mixed veggies.

Chicken
Put a whole frozen chicken in the crockpot with potatoes, celery, carrots, and rice. Add 3c water and 2 chicken bouillon cubes. Cook on low for 6 hours.

Taco soup
1lb grnd beef, onion, 28oz whole tomatoes with juice, beans ( dried use more water) can is fine too- pintos, kidneys, blackbeans- use what you have- Can corn with juice, 8oz tomatoe sauce, 1 pkg taco seasoning, 2c water, - cook on low all day. Serve with chips, and cheese

Minestrone
3 1/2 c beef broth- water with bouillion- 28oz crush tomatoes- 2 med. carrots sliced, 1/2c onion, 1/2c celery, 2 med. potatoes thinly sliced, garlic, can kidney or pinto beans, Spaghetti broken into 2 in. pieces- 2tbsp parsley, 2-3 tsp basil, 2 tsp dries oregano- mix and cook on low all day.

Round Steak casserole
2lbs stk., salt and pepper, i sliced onion, 3-4 quarterd potatoes, 1 can green beans, 1 can tomato soup, 1 can tomatoes- mix cook on low all day.

Stroganoff
Rnd stk cut up, spices, crm mushroom soup, 1/2 water, onion soup mix, mushrooms, cook on low all day. Add sour cream last 30 minutes, serve over egg noodles with salad.

layered dish
6 med. pot. thinly sliced
1 med. onion slices
corn
peas
1/4 c. water
Grnd beef
Cream mush soup
layer 1/2 each till done- cook all day on low

Shell casserole
1lb grnd beef
1 sm. onion
seasoning
1tsp. worchestire sauce
1/4c flour
1 1/4 c hot water
2tsp. beef bouillion
6oz shell pasta
mushrooms
1c sour cream
Add everything but sourcream and pasta. Add cooked pasta and sour cream during last 15 minutes.

BBQ Beef sandwiches
Add some stew meat- or stk cut up into cubes- pur bbq sause to cover- cook all dy- shred and serve on hamburger buns with onions, pickles, etc...

Tostados
add chicken or ground beef and 2 cans refried beans - or use homemade refried beans- add taco seasoning 8 oz tomato sauce, 1/2 water. Cook on lw all day, put on tostado shells. Top with lettuce, tomatoes, shred cheese, olives, sour cream, guacamole, salsa, etc..
Don't forget chili and beans too.

Scalloped Potatoes

2 cups water
1 tsp. cream of tartar
1/4 cup all purpose flour
1 tsp. salt
1/8 tsp. pepper
1 1/2 cups milk
5 medium potatoes, thinly sliced

Combine water and cream of tartar in large bowl, stir. Add potatoes, stir well. This will help keep potatoes from darkening. Stir flour, salt and pepper together in saucepan. Whisk in milk gradually until no lumps remain. Heat and stir until boiling and thickened. Stir in cheese to melt. Pour over potatoes. Cover. Cook on low 6 to 8 years


All these are not too expensive and good!

I'm going to try this! I haven't found a way to season my refried beans that the kids "beg" for more of them like they do canned.

Gee, i have to laugh -i don't bake bread, but i make homemade tortilla's!! (but you guys are inspiring me to get my bread machine out!)

Easy Peasy if you find a Tortilla Maker (my MIL has tracked down a few like mine at thrift stores, she says the 7" one makes better torts than the 10"). It's by V_________.

It's not VillaWare i don't think (unless they changed their name?)

Like this - but this is the big one. Of course, MIL is challenged and says hers aren't as good as mine.
