I know I have a while before my time comes for this, but how do you determine how much credit a class is worth? Also, how do you determine how many credits a student needs?

Pretty much one credit for each class, if it lasts all year and is similar to what the ps covers. We read a lot more lit, but I only give 1 credit of LA per year, even if it takes two hours. CC classes here count as one credit of high school per semester class.
I graduated ds a little early, with 26 credits, I think (don't have the transcript in front of me).
It's always a good idea to check colleges and see what they require, credit-wise. Remember they will list a minimum, not a maximum. Remember, too, that public school kids don't count music lessons, sports, or drama productions outside of school as credits, but homeschool kids often do, since those things aren't offered "at home."

My state requires 180 days of instruction...most classes are 45 minutes long. I figure hours in the activity. At our house we could spend several hours on a biology activity. Or for instance my daughter is a gymnast and she spends alot of time in the gym, so I give her PE credit for that. So it is completely possible to earn additional credit. Another way I do it is just by completing a program of study...it may not take us 180 days (but we school year round as a lifestyle) we might get it done sooner/longer. When we finish the student gets credit.
Also, I keep transcripts each year...I downloaded a MS transcript form and fill it in. She will dual enroll soon and it will be very helpful to already have this info at my fingertips.

What we are doing is basically..
Core courses are a year long and so they are 1 credit each as long as they finish 90%+ of the text. This includes English, Social Studies, Science, math, foreign languages, phys ed.
Electives are 1/2 credit. Usually includes health, consumer education, computer courses, music courses, any "core" courses done light or not finish the text, etc.
