I made these this afternoon and I must say they are some of the best muffins I have ever made!
The only changes I made were using 1/2 all-purpose flour and 1/2 whole wheat. I would have used all whole wheat, but was planning on making them for my DH's Bible study tonight. I didn't get them done in time. Anyhoo...I cut back on the brown sugar a little (actually used sucanat), added a handful of frozen blueberries, and added 1 tsp cinnamon. Also, I doubled the recipe with no problems. It took more like 20-25 minutes, though.
