I am making desserts for my nephew's rehearsal dinner next Saturday. It will be at my brother's house, and he is serving a pulled pork barbecue type of meal.

My sister is making sand tarts and lemon bars, I am making Mexican Brownies (http://www.epicurious.com/recipes/food/views/101249) and mini-carrot cake muffins. There will be about 80 people there, so my brother asked us to make the desserts finger foods that do not require utensils. His house isn't really so big, so he is trying to keep it simple.

So anyhoo, to my question. How many servings of each of the four desserts do you think we should make? I'm not really sure how to calculate it.

Not a caterer here, but here's what www.ellenskitchen.com says (for 100, for "tiny desserts"): If 4 or fewer kinds, 1 each per person: if more kinds, 2-4 pieces per person (people try all with several, but only favorites with many).

What *I* say is (1) they would all freeze well, I think and (2) the Mexican Brownies sound wickedly good, so *I* would make a LOT (4-5 pans, cut them smaller than 16 per pan) and freeze them (or send them here) if there are any leftover!

Wow, what a great link! Thanks for the info. I'm trying the brownies out on Bible study tonight. If they are a big hit I'll make extra, if just normal, I'll make 1 each. I'll also do 1 each of the carrot muffins.
