View Full Version : Need help with whole-wheat pizza dough - TIA!

I'd like to make my skillet pizzas with 100% freshly ground whole wheat flour. When I've tried this before, I've used soft wheat, but it doesn't come out right. Should I try it with hard white? hard red? TIA!

Once when I was very low on white flour for my pizza crusts, I used mostly wheat with the white and it worked out fine. Give it a shot, I say.

Hard wheat for sure. Bread flour, too, will work well. Soft wheat is really better for things like pastry, etc.
