Any coconut chicken recipes?

I'm looking through some coconut chicken recipes for dinner and thought I would ask here if anyone has a favorite recipe. Any favorite recipes? :)

Coconut Chicken?! :D Similar to Coconut Shrimp? YUM!!!!! I had NO idea (and no, I don't get out much LOL)

I have one in my head, very similar to chicken curry. Amounts will be approximate.
1-1 and a half pounds chicken breast cut up in bite size pieces.
Marinate raw chicken pieces in this spice mixture for an hour or so:
3-4 tsp. coriander
1 tsp. cumin
1/4 tsp. black pepper
1/4 tsp. cayenne pepper
1/8 tsp. tumeric
1/8 tsp. cinnamon
1/8 tsp. cloves
Saute in 1/4 cup olive oil in a deep large skillet:
1 cup thinly sliced onion
1 tsp. fresh garlic
1 tsp. fresh minced ginger
1/2 tsp. green chile pepper (like serrano, habanero or jalapeno)
Add chicken to skillet
Add 1 tsp. salt
1 cup coconut milk
Optional: diced tomatoes
Cook chicken thoroughly by simmering under cover for about 15-20 min.
Serve with rice and fresh pineapple
