Our's will likely be similar to Christmas -
ham
creamed potatoes
green bean casserole
cornbread casserole
pineapple casserole

Our usual is:
ham
pierogies
stuffed cabbage
hot German potato salad
some kind of green veg (LOL - gotta balance all that meat and starch!)
pineapple upsidedown cake
I'd love to have your pineapple casserole recipe though -- the cake isn't traditional as much as it's just yummy ;)

I'll have my choice of lamb, beef, pork, fish, omlets, dessert bar, etc, etc, etc. We're going to the Easter buffet at dh's club. Yummy!! We do it every year and they always know how to feed the kids and adults so that everyone is happy! Oh and there's live music too! And I get to come home to a clean kitchen. Happy day!!!

Pineapple Casserole
3 C soft bread cubes, I usually add a little extra and just cube slices of our favorite bread
1/2 C butter, this works well with Earth Balance dairy free sticks
1 C sugar
2 eggs (I use ener g egg replacer)
1 C mini marshmallows
1 20 oz can crushed pineapples
Mix softened butter, sugar, and eggs together. Add pineapple, bread cubes, and marshmallows. Put in a shallow casserole dish sprayed with Pam and bake at 350 for 45-60 minutes.
I double this, it's awesome warm or cold for breakfast the next day :)

We make Shoshlick (spelling is beyond me).
Carve up a leg of lamb into chunks to go on skewers. Marinate in italian dressing overnight. Cut up peppers (we like the colorful red, yellow, and green), onions, mushrooms--alternate on skewers. Make a skewer of cherry tomatoes.
Then day of, grill the veggies first. Stroke gently (oh, you know what I mean--with the brush thing) as you grill. Do the meat next, and lastly do the skewer of tomatoes. Combine it all in a beautiful bowl (ideally!), give thanks and chow down.
That's dinner--for breakfast we eat Easter eggs, bunnies and such, and have Easter Bread and Nutroll (homemade goodies--don't have time to post the recipes) and unfortunately, Easter Cheese--this is a disgusting "cheese" made of eggs and who knows what else, that is boiled, put in cheesecloth, and allowed to hang overnight. EEEwww. If it wasn't Dh's tradition, there's no way I'd do it.

I haven't even thought about our Easter menu. March 23rd just seems too early in the year for me. I guess I better start thinking about it though since Easter is only 2 1/2 weeks away.

We'll have a few guests over from church... the menu is pretty basic:
Honeybaked ham
Lasagna (I'm vegetarian, so this will be cheese)
Peas
Rolls
Salad
Potatoes
Whatever else anyone decides to bring!

Whatever my mom is serving! We celebrate Easter with my parents! I'll probably make and take something, though.

Same here..
She usually makes lamb or ham with lots of yummy veggies and fresh fruit. But chocolate is all my two dd's have on the brain that day, big baskets of chocolate :p

We usually grill ribs (to celebrate warming spring weather) and have baked beans and potato salad on the side. Dessert is optional and depends on whether we have dinner guests.

Ham with apricot sauce
Fancy mashed potatoes (with chives and garlic and cream cheese--yum!)
Some sort of veggie (whatever mil brings)
Deviled eggs
Apple-cashew salad
Rolls
Polish sausage
Piroghies
Sauerkraut
(We always have Polish stuff on the holidays.)
Lamb cake
Fruit pie
Whipped cream
