View Full Version : Does anyone have a terrific blueberry muffin recipe?

Our local farmer's market has been selling organic blueberries for 99 cents a pint, and we have eight of them we need to use up, LOL! DD5 has just about run her course on eating them fresh, so I need some new ideas. We'll definitely use them in pancakes, but I'd like to freeze some muffins too. The last recipe, which I picked from the Betty Crocker cookbook, resulted in little blueberry bricks :( I doubled the recipe, but I don't know why that should have caused such a poor outcome.
Anyone have something tried and true? Care to share? Pretty please??? :D

Do you have The Joy of Cooking? I love their blueberry muffin recipe, made with the maximum amount of melted butter. :)

It has an outstanding blueberry muffin recipe that calls for frozen blueberries (so that the color doesn't leach out into the dough). It's amazingly good!
And if you use that one, you don't have to freeze whole muffins--just batch size little baggies of blueberries! I have heard that to freeze them you should put them in the freezer on an uncovered cookie sheet until they are hard, and then put them into the bags. That way they do not stick together. I have not tried that, though--I just buy the organic frozen ones from time to time.
