I don't have a recipe, but my MIL makes the best meatballs. She doesn't have a recipe either--I've asked. She says the key that her Italian aunts taught her is not to knead the mixture too much. Mix it until just combined and then shape into balls quickly.

We do this one and really love it! It is a baked parmesan meatball recipe from Kraft. Very tasty!

I just made these last weekend. My family loves these! My aunt taught my mom how to make them many years ago and I am continuing with the same recipe.
In a large bowl mix with your hands until just combined:
1lb good ground beef
1 egg (whisked with a fork before adding to the mix)
(about) 2/3 Cup Progresso Italian flavored bread crumbs
(about) 2/3 cup Kraft grated parmesan cheese
(about) 1/2 cup your spaghetti sauce of choice
The mixture should hold together when you form balls, yet still be moist.
Make balls and place in a deep fry pan with some extra virgin olive oil. Saute meatballs in the oil until they are browned on all sides. Use a fork or a spoon to turn them as they cook. When they are browned, but not cooked through, add the rest of the sauce (I usually use two regular sized jars altogether for this recipe) to the pan, cover, reduce heat and simmer until meatballs are thoroughly cooked (about 1/2 hour). You can simmer them longer if you like. They don't seem to "over cook", they just get better and better! Then, just cook your pasta and you're all set.
I've never had a meatball that was cooked in the oven that I like. These are so much tastier and moister. They make great meatball subs the next day if you make a double batch so there are leftovers.;)

Here is our favorite recipe for meatballs.
MEATBALLS
1 lb ground beef, pork or sausage (any combination of)
1 egg
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 cup bread crumbs
salt and pepper to taste
Mix together well and form into balls. Bown in electric skillet
and then put in spaghetti sauce to simmer for at least an hour to finish
cooking.
I usually bake them in the oven at 350 for about 30 minutes then stick them in my sauce. I also usually triple the recipe and use 1lb each of the gr. beef, gr. pork, and ital. sausage. Then I freeze the extras for next time.
HTH!
