View Full Version : Dinner challenge - help!

Okay. I have: About one pound of pieces of pork loin. Not quite enough meat to serve my family of six as the centerpiece of a meal. So I'm looking for some kind of casserole, or some way of preparing said pork with other filling foods.
The dish must not involve dairy, mushrooms, yeast, nuts or chili.
I have a few sweet potatoes, but only one white potato. I do have pasta, salad greens, broccoli, an onion (yes, I need to go shopping), a couple of winter squash, and I think some carrots, plus frozen peas and carrots.
Ideas? It is 2:52 pm and dinner must be done by 6.

I'm sorry, I'm not a sufficiently good cook to be able to help! However, I thought I'd post so this post gets bumped and perhaps attracts someone else's attention. Good luck!

Hmmmmm. . . . I think I'd do a stir fry with all your veggies and serve it over pasta. Do you have any garlic or soy sauce you could cook the meat/veggies in?
Or - just cook the meat and have a lot of side dishes - a salad, broccoli, sweet potato french fries.

I was thinking cut it into bite size bits cook it and it to the pasta sauce of your choice or turn it into soup.
