apologia nature walks

we just started using the apologia I for science and are finishing up lesson 1. there is a scavenger hunt, and reference to more nature walks throughout the book. has anyone used this text in the winter time? most of the items found on the scavenger hunt list are going to be hard to find when it is so cold outside where we are. has anyone done any alternatives to this? or should i try something else for science until fall rolls around?

Can you just move on in the book and when it gets a bit warmer outside, then do the nature walks?
