View Full Version : Can y'all help modify a meatloaf recipe?

It calls for 1.5lb gr beef, & I just divided mine into perfect little 1 lb bags. So, I'd really like to stick to that.

I can divide pretty much everything by 2/3 except the egg. Does it really matter?

If it does, can I replace that 1/2 lb of meat w/ something else?

Can you tell I always measure the butter & milk for the mac & cheese? (I had a room mate who went nuts over this after a while. She said since I made it at least once a week, I should be able to eyeball it. I said, that's why God gave us measuring cups! LOL)

Just use 1 egg and don't worry about it. :) It'll work just fine, I promise!

In fact, meatloaf is pretty forgiving, and it would probably be fine if you didn't adjust the breadcrumbs, sauce, milk, etc, but if it makes you feel better, go ahead and multiply everything by 2/3. And use a whole egg. (Secret: meatloaf actually does fine with *no* eggs too, but I don't want to cause you to hyperventilate or anything...)

Nah, won't really matter. If there's lots of wet stuff (I'm assuming some ketchup is in there?) then cut back a smidge, but really, I think it'll be just fine.

You're so cute. I used to worry about the same stuff, now I check the recipe for ingredients only and let fly the amounts. It always turns out good. Just last night I threw 2 eggs into a meatloaf recipe and it was the best meatloaf on record in our house.
